Stew-ness

Today I am making stew in the crock pot.

Ingredients:

-Left over roast beef, with fat cut off.
-juices from left over roast beef
-lovely deep brown pork broth from some I cooked a while back, then froze
-two slices of bacon, minced very finely, for that smoky goodness.
1 large rutabaga, peeled and chunked
3 large potatoes, UNpeeled and cubed
1 package of frozen miripoix (onion, carrot and celery, minced)
1 package of frozen carrot 'coins'

I let that cook til all the frozen was unfrozen and the pork broth all melted, then added:

1/4 tsp tarragon
1/2 tsp thyme
1/2 tsp marjoram.
I would have added some crushed juniper berries but I couldn;t immediately find them. time to sort the spice cupboard.

then I added a little salt, and a sprinkle of malt vinegar to add a bit of spark.

It's cooking now, and will be done when the rutabagas get soft.
