Red Cabbage Side Dish

This recipe is adapted from a recipe sent to me by my friend Marietta.
Below is my version, adapted for middle-aged health concerns :-}
I've added Marietta's original kid-luscious recipe at the end of the post.

1 head red cabbage chopped into large bite sized pieces (it will shrink as it cooks)
4 TBS butter
1/4 C vinegar
1/2 t. salt
1/4 C Brown Sugar

4 TBS Honey

Put everything into a pot and simmer for about 1/2 hour or more, uncovered.

Taste the 'pot likker' (juices) about 20 minutes in. If you like, add a little more brown sugar or salt to your taste.

YUMMILICIOUS!

NOTE: Marietta's version is below. Her kids LOVE her cabbage.

"Here's a great fall recipe, for red cabbage. Even my oldest will gobble this down (the younger one won't eat much of anything). The ingredients make it sounds like it would be too sweet, but it is really just perfect, mildly sweet with a little bite.

1/4 cup jelly (strawberry, grape, or the like)
Put everything into a pot and simmer for about 1/2 hour or more, covered.
Everything should cook down until the cabbage is soft and it is swimming in it's own juices.
You can either serve it with the juices, such as with a roast, or as I do, drain off 90% of the juice and keep just the cabbage. The flavors will stay with the cabbage. This freezes beautifully, and is a great side for turkey, beef, or pork. "

This is similar to Fred's Grandms's who came from Denmark. She used red wine vinigar and current jelly. It is a good dish to bring to a pot luck. Thanks for reminding me of how good it is.
